After getting some time to play the game a bit, here's what I've come up with:
Gameplay - much, much better than last year. I've played three games, against Illinois, Ole Miss, and Nebraska, and I've only seen about five INT's total between the games. Rushing has been a little difficult, but the aforementioned teams have pretty decent defenses. However, I played these games on 3-min quarters (all wins, btw)
Recruiting - I love the recruiting. It reflects more of what goes on in a recruit's situation moreso than previous versions of the game, and not just throw points out there and hope to match the prospect's pitch. This time, you make calls to find the pitch instead of guessing, and they also have more than one aspect they are interested in instead of just one, which irritated me in 07 and previous installments. The addition of the promises and recruiting board were great moves by EA, which further solidifies the improvement in how recruiting is done.

I can only really say much about gameplay, Legend mode, online play and the new ESPN stuff they added to it, like the videos/photos. I'm waiting to get a memory card to send in to get the rosters to actually start a team in dynasty and start with recruiting and be it.
Campus Legend - Really fun. Really difficult if you are not starting. I was doing a D-Line with someone who I thought was someone who just got into Ball State, but he's not in the game, since he's a redshirt. Anyway..that is difficult to do, and this guy being the 4th starter wasn't helping. Then I started my own career as a halfback, blew through the playoffs, I signed to Illinois, because I let my friend choose between being 2nd string at U of I or 5th at UW. Anywho...that's a booger to do as well, because you only get points if you get like a first down and a touchdown and you have to get about 150 points or so. Tons of replay value for that though. Unfortunate for gamerscore whores, as I tend to be one sometimes, there are only like 4 achievements out of Campus Legend mode and 3 I think you could get in a normal dynasty.
Gameplay - Couldn't ask for a much better gameplay mode really. If I hear Madden improves on this, on top of new stuff for the actual game as opposed to roster updates, I may consider renting that, but NCAA will do me good for quite awhile.
Online Play - Only gripe about this is the two players I played today quit on me, one we just started pretty much, another it was the 4th quarter at a 7-7 ball game. But as for online overall, the kicking is such a bitch, because it is delayed on that, and details like that is what make online play in games like this such a booger. When you have to have a timing thing happening, it can lag a little to the point where it'll screw you up. Which is something I fear with what may happen with Guitar Hero III/Rock Band, but that's a different story.
ESPN On-Demand/Videos/Photos - These are all great integrations. Stuff you don't need, but you'd probably spend a few Microsoft points just to get. Their free obviously and the part where your saved videos play in your shrine is cool as hell as well.
This is by far my favorite game I've got for my 360. I get mad when people want to play Gears with me....how original...haha. I'll expect that when I get Halo though, I guess.

I'm actually interested in online play this year. I'm not big on it, but starting to consider getting a wireless adapter and giving it a shot. The lagging you mention is a red flag, though.
The only gripe I have with Campus Legend mode is the fact you can't select your own plays - I started out as a QB, and won the state championship - but I had some crazy playcalls, like a Hail Mary on a 2nd and 3 in the red zone. Or on a 3rd and long, I get a HB Dive. It was frustrating at first, but I would audible to a pass play (or run play if it was a pass originally) and it would work just fine. Oh, and I ended up going to Arkansas (starter).

I see that Hail Mary's tend to be a favorite inside the redzone. I'm like what the...I like having to block on one play and just pwning the hell out of some lineman. If the o-line actually did that, I would have a hell of a lot better time getting through the line.

Well...what were you expecting from Campus Legend...the players don't really call the plays.
Just the play selection AI needs to be tinkered with.

I went to Penn State as a QB at like 3rd or 4th string and by the first game of the year I was the starter

Yeah, I found Campus Lengend way way way too easy... instead of doing every practice, I decided on one a week to make it more realistic, or will start over everyone by the second game at worst.

I dunno if simming all your practices helps...but I was a backup my entire freshman year doing so.

Yeah, I pick a team where I am 4th string wide receiver and then only do 1 practice a week... otherwise you are basically instant starter...

I was the 2nd string QB for Ohio State (I could've been third for pretty much any other school. Some, such as Arkansas, even offered to start me). Got boring after the first game, though, so I quit.

I started a free safety campus legend... went to Florida as a fourth string... started with 75 points until the next move up... much more difficult because at that position, if it's a run you're lucky if you get to the ball carrier and if it's a pass you only get credit for INT's, tackles and sacks
