I tried MVP Baseball 2004 (LOVE IT) umm...i was wondering how do the other stack up to it???

I personally like All Star Baseball 2005 much more than MVP.

It depends on what kind of mode you use for batting in ASB. If you use timing-easy, then you can usually get like at least 7 runs a game if you hit the ball where the batter likes it. If you use the other modes, you'll get realistic scores.
I think MVP is easier to hit with, I mean easier like it's easier to score runs with. ASB IMO isn't hard to get used to but you definitely won't crush the ball everytime if you turn the difficulty up.
